Spring is right around the corner! Who's ready for warmer weather and more sunshine? I know I am, as well as lots of other living beings, including plants! One of the most exciting things about this time of the year as it's time to start planning and planting your annual gardens, yippee!! And what a better way to get in the mood to get your seeds started than to thinks about all the yummy food you will be growing and get to eat! Think of all the salads, roasted veggies, sauté, sauces, soups, casseroles, and many other dishes!

Below are four recipes using your kit's vegetables to get you even more excited to plant your garden!
Tangy Lemon Cucumber Salad
- 1lb thinly sliced Lemon Cucumbers
- 1/2 thinly sliced Red Onion
- 21/2 Tbsp. of Red Wine Vinegar
- 1 1/2 tsp Salt
- 11/2 tsp Sugar
Mix together the Cucumbers in a bowl with the Sugar and Salt and let it sit for about 5 minutes. Then mix in the Onion and Vinegar and let it sit in the refrigerator for 10 minutes, or until ready to serve.
Roasted Garlic Radishes
- 1lb trimmed and halved Fiesta Radishes
- 1 Tbsp. Olive or Avocado Oil
- 1/2 tsp Sea Salt
- 1/4 tsp Pepper
- 2–3 minced Garlic Cloves
- 1/4 tsp dried Parsley, Chives or Dill
Start by preheating the oven to 425℉. In a bowl, combine the radishes, oil, salt, and pepper and toss until radishes are evenly coated. Spread radishes out evenly on a large 9×13 inch baking dish. Bake for 20-25 minutes, tossing every 10 or so minutes. Add the minced garlic and dried parsley and bake for an additional 5 minutes or until radishes are golden brown and cooked through. Garnish with the herbs to finish.
Red Leaf Mandarin Salad
- 8C torn Red Leaf Lettuce
- 1 can (15 ounces) drained Mandarin Oranges
- 1/4C chopped sweet Yellow Pepper
- 1/4C chopped sweet Red Pepper
- 2 Tbsp. finely chopped Red Onion
- 1/3C slice, toasted Almonds
- 1/2C crumbled Feta Cheese
- 5 Tbsp. Olive Oil
- 2 Tbsp. Honey
- 4-1/2 tsp Apple Cider Vinegar
- 2 tsp Dijon Mustard
- 1/8 tsp Salt
In a large bowl, combine the lettuce, oranges, cheese, and peppers. In a small bowl, whisk the oil, honey, vinegar, mustard, and salt. Stir in onion. When you are ready to serve, pour over salad and toss to coat, then sprinkle with almonds.
Creamy Golden Beet and Carrot Soup with Ginger
- 6C chopped Golden Beets (1-inch cubes)
- 4C chopped Carrots 1/2-inch slices
- 1C chopped large Yellow Onion
- 1 Tbsp. chopped fresh Ginger
- 1 Tbsp. chopped fresh sage
- 6 chopped Garlic Cloves
- 1/2 zested and juiced Lemon
- 1 tsp kosher salt
- 1/4 tsp ground Pepper
- 4C Vegetable Broth(no sodium)
- 2 Tbsp. Olive Oil
Pace a large pot, add the oil and preheat on medium heat. Then add beets, carrots, onion, ginger, sage, garlic, lemon zest, salt, and pepper. Mix it together well. Turn the stove down to medium-low heat for 10-15 minutes, or until the garlic, onion and ginger are soft and fragrant. Add the broth and bring to a boil. Reduce heat and let simmer for 40-50 minutes. Make sure the beets are soft, then purée the mixture in a blender until thick and creamy. Add the lemon juice, and season with additional salt and pepper to taste.
